Does this theme support using custom templates for a specific category, pages, and single post in a certain category? My goal is to hide the Comments and Sidebar for all custom pages and a category that will just have 5 or 6 listings of biographies of artists. I’d like to center the content also.

There are no such built-in templates but you should be able to do them manually in any theme. You can read more about it in this article.
