I chose this theme, because of the demo blog:

Any easy way to set it up to look like the demo blog?

Hannahbelieve me, this theme gives you more reason to choose it.
– admin > appearance > theme options > layout > Choose your preferred Layout :
you leave the default choice. its the first from the left. if you do mouse over says “Content / Sidebar”
– admin > appearance > widgets:
delete all widgets from “Header” and put at least one in “Sidebar Top”

If you’re looking to have max width without sidebar, see below. I was looking to do exactly that… “Blog, Full Width” did not function as I expected it. The advice below is courtesy of the super-helpful (and very busy) Alex!
“Try to add this in your css:
.page-template-template-no-sidebars-php #wrapper,
.page-template-template-blog-no-sidebars-php #wrapper,
.page-template-template-portfolio-no-sidebars-php #wrapper { max-width:1200px; }The max-width of 1200px is only an example. You can adjust it to your needs.”
I set mine to width of 1140, because I’m pretty sure that’s the default width for the theme. You can see my work in progress in the link below.

looks like you’ve choosen a sidebar LEFT in your theme/options/layout.
The original theme page you’re referring to is a post and has the sidebar on the RIGHT side.
No matter where the sidebar is, try to put in some widgets into it.
