posts v grid

Hi,
Thank you so much for this beautiful Pinboard theme. I am new to wordpress and while I have been able to customise it, I am struggling with 2 main areas.

1 – I have opted for a grid homepage but I would still like to be able to have a page blog (What I find today) focusing on 1 article at a time. I have tried every possible scenario (blog, blog full with, blog left side bar…) but it always gives me at least 2 posts. I also have put under the theme options>blog pages – 5 full post before grid. The only way I found it works is if I change under theme options> home page – 5 full post before grid. Then all my pages have 5 full post before grid. Unfortunately, it is not suitable for my home page to have full posts. I really need to have some pages with grid and blogs with posts only.

2- I would like to create a landing page similar to my home page. A duplicate. But I can’t seem to be able to do it. I just need people to view the same things wether they click on our logo in the header or on ‘Home’ in the menu. The layout I get for http://www.homeculture.com.au (my home page) is different for the one I get under the page ‘Home’ which is a landing page.
